  • In a medium bowl, beat eggs, salt, pepper and picante until well scrambled. Stir in ham pieces.
  • Spray a 10-inch skillet with cooking spray. On medium heat, cook egg mixture in skillet stirring/scrambling until egg is fully cooked-approximately 10 minutes. *There may be some liquid remaining in the pan even after eggs are done due to high amount of water in picante sauce.
  • Once egg mixture is finished, spoon into heated flour tortillas and top with cheese and onions. Serve immediately.


This dish is a hit with kids and guests and very quick & simple to do on short notice. It is versatile-different cheeses, types of sauces or toppings can give you a whole new flavor. Whole wheat tortillas and fat free cheeses may be substituted to reduce calories. This recipe may easily be doubled to accommodate a large group as well. Hope you enjoy as much as my family does!
