  • Cook bacon or sausage, set aside. Scramble eggs, onions, green peppers, and add crumbled meat. Put in a bowl.
  • Put all tortillas on a plate in front of you. Put a serving spoonful of egg and meat mixture on a tortilla, a handful of cheese, and fold over each side and the ends.
  • Place folded ends downward on a hot greased griddle or skillet and repeat. Cook on both sides top with salsa!


You can make less at a time. But for my Mother and me, I make 12 or more at a time and I put the ones that are left in a large Ziploc bag and we have a ready made breakfast to heat up about 5 to 6 days. I just heat them in a skillet with a lid for a few minutes. Oh yah, when I use sausage, I just crumble and fry it up and add the eggs and green pepper and onion. I made these for New Years lock-in for our church members. They went over real big.
