  • Put on medium size pot of water to boil (enough to cover potatoes). Cook bacon and drain. Peel potatoes and cut into bite size cubes approx. 1/2". Boil potatoes approx. 10 minutes or until just tender. Drain potatoes and water from pot into colander.
  • While potatoes are draining, put 4 cups of milk into pot and start heating on low to medium heat -DO NOT BOIL. Add bouillon cubes to the milk. Cube up the Velveeta Cheese into small chunks and add to the milk, stir frequently. Crumble bacon up into 1-inch pieces and add to soup. Add onion powder, salt and pepper.
  • When the cheese is just about melted add the potatoes back into the pot and stir for about 5 more minutes and serve.


Caution: It is best to use a non-stick pot so as to not burn the milk on the bottom. This will ruin the soup if it gets burned. (I know!)
