  • Preheat oven to 350 degrees. Cream butter, sugar and egg until well blended. Add flour, baking powder, salt, milk and vanilla; mix until all combined. Form into ball and put in refrigerator while you prepare filling.
  • Combine sugar, cornstarch and cinnamon in a large saucepan, stir well. Stir in honey and almond extract. Add sliced peaches, stirring gently to coat. Cook over medium heat, stirring frequently, until mixture is thick and bubbly. Spoon peach mixture into a lightly greased 11x7x1 1/2-inch baking dish.
  • Remove topping from refrigerator and place on lightly floured surface, with a lightly floured rolling pin, roll dough to about 1/8-inch thickness and cut into strips. Place strips on top of peach filling forming a lattice topping. You may sprinkle with about 1 tablespoon of cinnamon/sugar on top (opt). Bake at 350 degrees for 30 to 35 minutes, or until golden brown. Cool cobbler for 15 minutes on a wire rack.
