  • Clean and wash turkey, removing the gizzard packet and neck from inside. Heat butter and oil in skillet. While butter is heating, add garlic and tarragon, and saute a couple of minutes.
  • Baste turkey and place in oven preheated to package directions (at least 325 degrees is recommended for safety). Bake according to the package directions, basting the turkey every 30 minutes. About two-thirds of the way through cooking, cover the turkey loosely with a foil tent to keep from overcooking the breast and drying out your turkey.
  • The turkey is done when the minimum internal temperature taken with a meat thermometer reaches 165 degrees. While this is the temperature recommended for safety, some people choose to bake a turkey even longer than this for personal preference.
  • Let the turkey stand for 20 minutes before carving, allowing juices to set and making carving easier.
