  • Cut package of bacon in half with a knife. Keep 1/2 out to cook, put other in freezer for another time. While bacon is cooking, slice tomatoes and onion.
  • Toast bread if desired. If using cheese, place slice on toasted bread while still warm from toaster. Then place hot bacon {usually four pieces will cover the bread} on top to melt cheese a little. Of course, you will want to drain the bacon at least a little on a paper towel first. Pile on as much spinach, onion, and tomato as you'd like.
  • Coat other slice of bread or toast with your choice of spread. I like the extra flavor of Miracle Whip, and besides, even the regular version has less fat and calories than mayo.

Have some fruit salad on the side, and a nice glass of iced tea {green, white, or black} and you've got a nice summer meal that really packs in a lot of nutrition, fiber, anti-oxidants and all that good stuff. I make this sandwich as an attempt to eat healthier even though I may be eating something we've come to think of as "bad", like bacon and bread. I want to eat healthier, but don't want to give things up. I try to choose healthier versions of things…like the flax & whole grain bread, and the spinach instead of lettuce. Adding the onion just ups your veggie intake and adds lots more flavor. It can be really easy to get in your fruit and veggie servings (and many different colors of them, as we should) with just a little thought. And the cheese? Well, I just LOVE cheese!! Besides, I'm a woman...I need my calcium, right? :-)
