  • Before starting on soup: Cook rice as instructed should be about 2 to 2 1/2 cups. Cook bacon as desired, cut up into easily spoonable, bite-size pieces.
  • Soup: Combine in large cooking pot the drained black beans, tomato soup, and diced tomatoes. Heat to simmer. Then add in meat and rice, return to simmer. Add salt, pepper, and hot sauce to taste and serve!

Special Equipment Needed


* You are more than welcome to either completely leave the bacon out or substitute 1 lb. of your favorite meat. Just make sure it's still in the easily spoonable, bite-size pieces. ** Feel free to substitute part or all of the second can with salsa if everyone likes things a bit spicier. *** If you like things a bit spicer, add in your favorite spicy pepper with the diced tomatoes, or at the end after cooking. Note: This soup will be thick. If it starts looking like it might start drying out, add in about 1/2 cup of water to re-hydrate it. Salt to taste.
