  • Mix the vegetables and cilantro in a medium bowl.
  • Mix olive oil, lime juice, vinegar, salt, and pepper in a small bowl until emulsified.
  • Mix dressing with vegetables. Cover and refrigerate for a minimum of 2 1/2 hours before serving.

Notes

2 Roma tomatoes are great substitutes when tomatoes are out of season. I typically double the recipe, since it keeps well in the fridge for up to a week. It's a great, healthy snack with tortilla chips!
