  • Mix together all dry ingredients. Add vanilla and oil. Slowly pour in boiling water and beat everything together until well mixed. Add eggs, one at a time, beating in each one well.
  • Pour batter into cupcakes or rectangular glass dish.
  • Bake at 350 degrees for approximately 30 minutes until toothpick inserted comes out clean. Cool cake completely. Serve with fresh berries and Cool whip.

Notes

This is a very versatile cake and can be baked in any kind of pan, and used in layers. It is so moist it doesn't need frosting, only a dollop of Cool whip and berries makes it great!
