  • Marinate shrimp and sliced onion in Italian dressing for about 2 hours.
  • In a large heated skillet, saute shrimp and onion on high for 3-5 min. Remove from skillet and set aside. Place frozen eggplant slices in bottom of skillet and top with shrimp mixture. Sprinkle with garlic powder and Creole seasoning add white wine.
  • Cook covered on med high for about 20-25 minutes allowing the liquid to cook out and the mixture to blacken.

This can be done without the wine, but the taste is really not as good.
