  • Mix buttermilk and wheat kernels in blender for 3 minutes. Add butter, egg, salt, and brown sugar. Blend for 10 seconds.
  • Add baking powder and soda. Pulse 2-3 times just until mixed. Let mixture foam up and get light.
  • Cook at once on a hot, 375 degree, nonstick griddle.

Notes

DO NOT double recipe. It gets too bubbly for blender to hold. 46 calories, 2 grams of fat - per pancake. I know this may not look that appealing, but they are so good! With practice you will be able to get the wheat kernels to just the right consistency; not crunchy, nor mushy.
