  • Beat eggs in a bowl and add milk to it. After stirring, add flour. Your mixture should not be too watery or too thick, it has to be in-between. If it's watery add more flour or if it's thick add more milk.
  • Mix it well to prevent lumps. Season it with sugar and pinch of salt (taste you mixture before so you can control seasoning)
  • When your mixture is ready, heat your pan about medium low and spray it with oil or let butter or margarine melt before you put your pancake mixture on the pan.
  • When you put your pancake mixture on a pan don’t put a thick layer because it's going to take a while to cook. It might burn your pancake but it won’t be fully cooked, so when you put it on a pan make a thin layer and try to make sure it doesn't stick to the pan.
  • Fry about 2 -3 minutes on each side (they cook very fast so make sure your pancakes don't stick to your pan.) When you see a golden brown or even lighter pancake, flip over to another side and cook it again in the same way.
  • Do the same thing with the rest of pancake mixture. After you are done, you can serve it with sour cream, jelly, jam or anything that you like.

Notes

Blini is a traditional Russian breakfast that our grandmoms and moms used to make early on a Sunday morning before everyone gets up. If you want to try it at home, it's a very easy recipe and your family will love it. Enjoy!

    My Grandmother used this recipe as well and used a hint of vanilla. We make them very thin then top with sugared fruit. You can even roll them up like a taco with the fruit filling, keep warm in the oven, and sprinkle top with powder sugar.
