  • Prepare bacon as directed on package to desired crispness. Set aside to cool. Slice Roma tomatoes into medium slices. Sprinkle with pepper, if desired.
  • Spread 1-2 Tablespoons of dressing over each pita bread. Divide tomatoes and layer over dressing on pitas. Tear 3-4 bacon slices into bite size pieces over each pita. Sprinkle with 1/2 cup of mozzarella cheese.
  • Bake on pizza stone or baking sheet in 350 degree oven for 12 minutes or until cheese is starting to brown and pitas are crisped.
  • Before serving, mound a pile of baby lettuce in the center of each pita. Sprinkle a touch of balsamic vinaigrette on the lettuce (optional).


This recipe can be slimmed down easily with fat free dressings, healthy bacon choices, and low fat cheese. You can even use a low-carb whole wheat tortilla instead of a pita. Also, if you can't find flat pitas, you can use pre-made pizza crusts, individual sized or large sized to make one large pizza.
