  • Finely chop 1 cup of pecans. In a bowl, cream butter & cheese until smooth. Add egg yolk, stirring to combine. Add flour and chopped pecans; stir to form a dough.
  • Shape dough into 2 logs, 12-inch long and about 1 1/4-inch diameter. Place in fridge 60 minutes (they cut better).
  • Preheat oven to 350°F. Lightly grease baking sheet or use parchment paper. Slice logs, 1/4 inch thick. Arrange about 1/2 inch apart on baking sheet. Top each cracker with pecan half. Brush with beaten egg white. Bake 12 minutes until golden.

Special Equipment Needed


After making logs, can wrap well--air tight-- and freeze for months, remove, slice and bake as above.
