  • Crust:
  • Mix sugar, flour and butter in bowl until well blended. Add water. Only mix until combined...over mixing will make for a tough crust! Push into the bottom of a jelly roll pan or cookie sheet (with sides). The easiest and best way is to use your fingertips/palms. (I wear a plastic glove, but you can use a Ziploc baggie to put over your hand as well.) It should be an even thin layer over the entire bottom of the pan.
  • Bake at 375 degrees F until golden brown around the edges, approx. 15 minutes. When golden brown, remove from oven and cool completely.
  • Filling:
  • Blend cream cheese and confectioners' sugar until all the sugar is incorporated and cream cheese is relatively smooth. Fold in, or mix on low, the large tub of Cool Whip. Spread over cooled butter crust.
  • Top:
  • Spread your favorite pie filling over the entire top of the pan. Chill for 1 hour.

Special Equipment Needed


This is a very easy recipe and makes at least 12 decent size serving. It has the richness of a cheesecake without the heaviness... I have also topped with strained crushed pineapple or my favorite fresh fruit. The best part is the longer you let it chill, the better it if you have leftovers, it is even better on day 2!
