  • Season the chicken with the salt and pepper. Marinate in all the ingredients except the oil and rice for at least 24 hours.
  • Place oil in large, heavy pan up to one inch. Fry chicken in batches in the hot oil till crusty and brown outside. Transfer to a heavy baking pan, top with marinade, cover. Bake at 375°F till done, about 40 minutes.
  • Remove chicken from sauce, place in a large serving dish with the cooked rice. Bring the marinade to a boil and thicken, if necessary, with a cornstarch slurry (1 part water, 1 part cornstarch). Pour sauce over chicken and serve immediately.
