  • Put your pork butt in a large bowl of vinegar and refrigerate overnight. The vinegar will bring out the taste in the meat (very good).
  • When you are ready to cook the roast, preheat your oven on low broil. Add your roast to a roasting pan. Make a slit in the roast but not too big, just enough were you can see inside of the roast. Pour Italian dressing on top evenly so it can soak in the roast. Sprinkle bread crumbs on top.
  • Chop your potatoes and carrots up and place in pan. Fill the roasting pan less then half way with water. Place lid on top and place in oven. After the first 3 hours check the roast and see if it’s cooking alright by cutting into it. Then place back in for another 3 hours and during the last 3 hours check every hour. When done it should be a nice light to medium brown color and juicy.

Special Equipment Needed


You can take a sauce pan and take some of the juice from the meat and put a little milk and flour in it and make a gravy for your pork butt.
