  • Cut off ends and peel the eggplant. Cut into thin slices. Layer eggplant in large strainer; salt lightly. Repeat steps until eggplant is gone. Put a plate under strainer to catch the juice. Strain for 3 hours. Squeeze all juice out of each slice, thoroughly.
  • Beat eggs in a bowl with a little salt and pepper. Put breadcrumbs in separate bowl. Dip each slice of eggplant into egg, and then the breadcrumbs. Set aside.
  • Heat frying pan with oil. Fry each slice of eggplant on each side, until they've reached a nice golden brown. Serve Hot!!

Special Equipment Needed


If you want to make Eggplant Parmesan, just add spaghetti sauce and some mozzarella cheese, after frying it, and bake in oven until sauce is hot and cheese is melted.
