  • Prepare the onion, peppers, eggs, and grated cheese. In a large fry pan, Pam spray, fry sausage, half way then add veggies, then the beaten eggs, stirring well, then the grated cheese. Stir till all cooked pretty well. Set aside.
  • Put a clean fry pan to warm up the taco shells; do not add any oil, just flip the shells over couple times till warmed up.
  • Then spoon on some sour cream and salsa on shell then some of the sausage mixture. Roll, turn one edge in and continue to roll, enjoy!!

Notes

These I make up at camping and for a big crowd, everyone enjoys making them themselves or you can and serve on a platter at the table,, good at tv football too,, be sure to have napkins out..enjoy!!
