  • Preheat oven to 350°F. Spray 6 cups of a muffin pan with cooking spray. Arrange meat slices so they line the muffin cups completely, edges of the meat may stick up above the cup. Bake for 5-10 min.
  • Remove from oven & break one egg into each cup (carefully break up the yolk with a fork). Add chives/onions/veggies of your choice. Add salt & pepper. Return to oven for 10-15 min. Check eggs, remove from oven when eggs are done to your liking.
  • Sprinkle with cheese. Serve immediately.


Also can be made with egg whites or egg substitute. Try breaking all eggs in a bowl. Add a touch of milk. Whisk & divide egg mix into each muffin cup. After putting the egg mix in the muffin cups first, try chopping up the meat. Add the meat & veggies & cheese of your choice, then bake. This will make little quiches! You could add some hash browns to the other 6 muffin cups to create a whole breakfast all at once! Enjoy!
