  • 1. Preheat oven to 450°F. Place muffin cups in pan and lightly spray the muffin cups with cooking spray.
  • 2. Brown turkey in skillet over med-high heat, drain, pat dry and crumble. Combine turkey, flour, oat bran, cheese, baking powder and baking soda, season all and accent (to taste/optional). Slowly add buttermilk and stir until moistened (gooey but not soaked).
  • 3. Drop large spoonfuls into muffin cups.
  • 4. Bake for 15-25 minutes until golden brown. (Test doneness with toothpick or fork-ready when it comes out clean).


I saw this recipe and decided to make my own. There are so many variations possible; it makes this a great, versatile treat. I used low fat products, but that's a preference, any shredded cheese will do (buttermilk too). Regular flour can be substituted as well. The season all and accent are to taste and I do recommend some around with whatever ya like!
