Being single and having to shop the mark-downs led me to create this great soup. Leftover fried chicken is quite often very cheap, but tastes less than great when re-heated in the oven. The flavor, however, carries well into this dish.
Very often one can find a day old, broaster chicken for less than the cost of a whole, fresh bird. Time and convience matter as well with a hectic life. And I don't have to take the time to cook the chicken before making the soup. I like to serve it with thick slices of garlic bread, or bread sticks.
