  • Preheat oven to 350 degrees. Butter a 2-quart casserole dish (8-inch square pan is perfect for this).
  • Mix hash browns, butter, sour cream, cheese, and chives into large mixing bowl. Add a couple of pinches of salt and pepper. Mix thoroughly until all ingredients are well blended. Scrape mixture into the casserole dish, smoothing the top with a spatula.
  • Bake about 55 minutes or until the top is golden and bubbling around the edges. Serve warm.

Special Equipment Needed


This is a modified version of the Potato, Cheddar, and Chive Casserole recipe from the book "One Potato Two Potato" by Roy Finamore and Molly Stevens. It is very very cheesy and one should use the sharpest orange cheddar available. It is very easy to prepare and most of the total time is just cooking time. I first made it 3 years ago and it has since become a staple at every major holiday function or party throughout the year.
