  • Preheat oven to 350. Combine tomatoes with their liquid, 1/2 cup cheese, basil and dry stuffing mix. Stir just until moistened.
  • Pound chicken till 1/4 inch thick. Spread with stuffing mixture. Starting at narrow ends, tightly roll up chicken. Place seam side down in 13 x 9-inch baking dish. Drizzle evenly with dressing.
  • Bake 40 minutes. Sprinkle with remaining cheese and bake 5 more minutes.

    My Mother is a very picky, healthy, eater and she said that this chicken was the best she ever had. Even I *hate* meat but this was DELICIOUS!

    This recipe was quick and easy. The recipe makes it sound a bit difficult but it is not. My husband is a very fussy eater and does not typically like tomatoes but this recipe was a hit at our dinner table.
