  • Clean Brussels sprouts by removing any blemished outer leaves and stump tip and rinse well. Cut all your vegetables and chorizo as indicated above.
  • Prepare large skillet with olive oil heated on a medium heat. Add onions and chorizo and cook until onions are browned.
  • Add Brussels sprout to onions and cook covered with lid until slightly browned stirring to get even tenderness. Check by piercing with knife. If knife goes in and comes out easily they are done. Stir in butter and let melt and serve.
