The squash is pretty tricky to peel but once you get the hang of it, you'll make these often. Very buttery taste, simular to fried eggplant or fried squash. One average size squash makes a LOT of fries. I put mine under the double broiler and shake often to get them crispy. They really don't need ketchup because they are so buttery and don't really need it! YUMMY!!!
