  • Place chicken (frozen or thawed), enchilada sauce, green chilies and salsa into pot. Cook on stovetop medium-high heat. Stir occasionally.
  • Prepare Mexican rice using can of diced tomatoes as described on box. Warm tortillas in the microwave 15-30 seconds. When rice is done (per box instructions), check temperature of chicken. Over 180 degrees is completely cooked. Continue to cook chicken until completely cooked. Remove rice and chicken from stovetop.
  • Place tortilla on plate and put chicken in center. Shred with fork. Top with enchilada sauce and cheese. Roll up tortilla. Top with enchilada sauce and cheese. Microwave 30 seconds to melt cheese. Repeat as necessary with each tortilla. Add rice to plate.

Special Equipment Needed


Chicken can be frozen or thawed when you cook it. Adjust temperature to keep pot simmering-boiling but not to burn the food. Tastes great with or without tortillas (with or without shredding chicken). Can make this dish as hot and spicy as you want or as mild as you like. Add more chicken to make more servings!
