This dish is incredibly versatile and easy! You can make it stretch (easily increases to 8 to 10 servings) really easily to feed a large gathering, and change up the ingredients to fit your taste. The key is to always make sure and add enough liquid to cover all the ingredients. You can always add more chicken broth or just water if you are a little low on liquid. Some easy variations include using two kinds or all three kinds of meat, leaving out the mushrooms or other ingredients, using red beans instead of black, make it spicier with more seasoning or diced peppers, adding more tomatoes, using cream of chicken soup instead of chicken broth, etc. To feed more people just add another pound or two of meat, increase the veggie and bean amounts to your preference, and increase liquid amount until all ingredients are covered. If you add more meat, check that meat is cooked through at the end of 30 minutes. If not add another 5-10 minutes on the cook time until meat is cooked through.
