  • First start the eggs - leave them to boil for 7 min, take out, and then let sit for 10 min. Meanwhile, wash potatoes, peel and chop into squares. Wash again with cold water and then boil till you can put a fork thru them. Drain potatoes.
  • Then put potatoes in big bowl. Peel eggs and throw them in bowl with potatoes. Add mustard, mayo, relish, onions and seasoning. (Add as much as you want or as little as you want to your tasting) Then stir together, make sure eggs are chopped up in with taters.
  • Then put in fridge for about an hour.

Special Equipment Needed


This is a great recipe to go with BBQs and picnics. My family loves it -- we use it all the time. I learned it from my Cajun father-in-law. Also, If you like to experiment, add little things like chopped celery or peppers.
