  • Clean calamari tubes and cut into 2 inch or 50mm sqares then lightly cut diagonally both ways on the inside of the calamari forming small diamond shapes.
  • Then mix the season salt and plain flour in a bag. Place the calamari squares in the bag, shake until evenly coated, and place to one side.
  • Heat the oil in a fry pan or wok then gently fry the calamari until golden brown. If they are cut properly they should roll up into a tube shape while they are frying. Fry no more than 4 pieces at a time.
  • When finished, place to one side on a plate to drain. Then open the cans of passion fruit sauce and pour cold onto dinner plates just deep enough to cover the bottom of the plates. Then arrange the calamari evenly around the plates. Serve and enjoy.

Special Equipment Needed


To make the calamari more tender, soak in full cream milk for half an hour then drain before rolling in the flour.
