  • Cut potatoes into chunks. Slice onion & carrots. Simmer all until done. Drain & place in casserole. Add peas.
  • White sauce: Melt butter in a sauce pan. Add flour & stir & simmer for a minute. Remove from heat & add milk. Return to medium heat, stirring often until thickened. Pour over vegetables.
  • Add tuna broken up & stir all together. Crumble saltines over the top & add pieces of butter or margarine on top of saltines.
  • Put in a 350 degrees F oven for approx 20-30 minutes until edges start to boil & crackers are a light brown.


My husband was upset that I called it California Chicken & ended up with tuna so I have made it with chicken cubed but it is not quite as flavorful.
