  • Deep fry vermicelli, a few at a time, in 3 cups of hot oil for about two seconds, till they puff up and turn a very pale brown. Drain. Slice beef into thin strips and marinate in soy sauce, oyster sauce, cornstarch and sesame oil while you prepare remaining ingredients.
  • Soak mushrooms in lukewarm water till soft. Slice green pepper, chestnuts and mushrooms fine. Saute chopped garlic and ginger; add beef and cook for about two minutes; remove.
  • Saute vegetables in 1 Tbsp. oil; add salt and sugar and cook for five minutes. Add beef. Fry half a minute. Place fried vermicelli on serving platter and pile beef mixture on top. Serve with lettuce leaves as wraps.
