  • In a small bowl combine all spread ingredients and mix until well blended. Cover and refrigerate. In a large bowl combine all dry ingredients for muffins sifted together; flour, sugar, salt, baking powder, and cinnamon.
  • In a small bowl stir milk and Maxwell House instant coffee until coffee granules are dissolved. Add butter, egg and vanilla. Mix well. Stir into dry ingredients just until moistened. Fold in chocolate chips.
  • Fill greased or paper lined muffin cups 2/3 full. Bake at 375°F for 15-18 minutes or until muffins test done. Cool for five minutes, serve with chilled spread, and enjoy.

Special Equipment Needed


I have made these muffins for get togethers with my girlfriends and they are gone quickly!. One shortcut I've found to be very handy is, when mixing the wet ingredients instead of using a small bowl I use a plastic cup, everything fits in perfectly with plenty of room to mix and afterwards just toss the cup in the trash. Makes clean up so much easier. Spread yields 1 cup Muffins yield 1 dozen
