  • Blend all ingredients together well in a bowl.
  • Set covered bowl in refrigerator for about 30 minutes.
  • After chilled, prepare frying pan with non-stick spray. Make patties and place in pan on low to medium heat. Watch carefully not to burn. Cover pan after turning patties over once. Cook until both sides are medium brown and are cooked through. Total cooking time is about 5 - 7 minutes for each side.

Notes

Mango Salsa: One chopped mango, 1 small peeled cucumber, cilantro, green onion, a tablespoon of sweet corn (optional), juice of one lime, pepper, salt. Serve a couple tablespoons on the side of each patty. Optional: A sauce can be made by mixing one part creme of coconut with two parts of sour cream. Sauce should have the consistency of yogurt. Patty can be plated on a tablespoon of sauce topped with a slice of lime. This is an easy, delightful, low calorie, low fat, and refreshing dish for lunch or dinner.
