Mango Salsa: One chopped mango, 1 small peeled cucumber, cilantro, green onion, a tablespoon of sweet corn (optional), juice of one lime, pepper, salt. Serve a couple tablespoons on the side of each patty. Optional: A sauce can be made by mixing one part creme of coconut with two parts of sour cream. Sauce should have the consistency of yogurt.
