I made this for a Holiday party first & it was delicious. Although, it is a tiny bit labor-intensive - it is WORTH it! So, I made more for Holiday "Gift" Baking to deliver to customers & other such special friends -- a HIT! I will make it year after year and/or upon request. Everyone keeps asking for the recipe. One thing I did to increase efficiency a bit was use my stand mixer vs. my hand mixer. Otherwise, FIVE stars. It is very rich - I made 8 piece pies, but decided you could even split it up into 16 piece pies (or somewhere in between) and people would probably understand/agree.

Rated 5 out of 5 by from This is just SCRUMPTOUS. This is just SCRUMPTOUS. I have made this twice and I'm thinking about making again this weekend! If you enjoy coconut then this is for YOU! Very Good! Also, just use a 14 oz bag of Bakers coconut instead of the more expensive frozen. You'll be in coconut heaven!
