  • Use cheese at room temperature, place between two pieces if wax paper, about 24 in long. Use a rolling pin and roll out the block of cheese -- press both directions until finished measures the width of the wax paper and the length is about a foot and a half long, about 1/4 inch thick.
  • In a small glass bowl, mix cream cheese and mild green chilies.
  • Take the top piece of wax paper off and spread cream cheese mixture over the entire sheet of cheese. Now take the bottom of the cheese roll and fold it up half way to the top, press to seal, pull off the wax paper back and then grab the top of the wax paper and fold it down over the bottom of the cheese. Press together. Then pull back the rest of the wax paper from the top. Serve with crackers. I trim off the ends of the cheese and then cut the log in half. Remove all the wax paper and store in foil wrap. Refrigerate a couple of hours before serving.
