  • Preheat oven to 350°F. Cook and stir onion in margarine in a large skillet until tender. Stir in chicken, 1/4 cup picante sauce, cream cheese and cumin. Cook until thoroughly heated. Stir in 1 cup cheese.
  • Spoon about 1/3 cup chicken mixture in center of each tortilla. Roll up. Place seam side down in a 12 x 7 inch baking dish. Top with remaining picante sauce and cheese.
  • Bake 15 minutes.

Notes

This works great with leftover chicken or turkey, but also try leftover beef or pork roast. REALLY GOOD. Much better than the ones made with soup mixes. Cilantro can also be added for extra flavor, or just buy the salsa with cilantro in it already.

Tried 1/3 reduced fat cream cheese, I recommend using reg cream cheese as recipe suggests. We made our own Thousand Island dressing to mix in the recipe.
