  • Place 1 inch of water in a saucepan. Add carrots and bouillon. Bring to a boil. Reduce heat, cover and simmer until carrots are crisp/tender, about 7-9 minutes.
  • In another large saucepan, combine Velveeta and butter. Cook on low until melted. Add cream cheese, onions, salt and pepper. Stir and cook until all cheese is melted.
  • Drain carrots and combine with the cheese mixture. Transfer to a shallow, greased baking dish. Cover and bake in a 350 degree oven for about 20 minutes.

Special Equipment Needed


I have made this with the salt and pepper added, and without. It tastes just fine without, if you don't want the sodium. My husband and kids asked for seconds. Very tasty side dish.
