  • Tear greens reserving the core of the romaine lettuce. Slice the romaine core into thin diagonal slices. (Use about 1 cup core.) Cover and refrigerate greens until serving time.
  • Dressing:
  • In food processor or bowl, beat egg. Add the remaining salad dressing ingredients and blend. Refrigerate until needed.
  • Croutons:
  • Preheat oven to 275 degrees. Trim crust from bread and cube it to desired size (keep it fairly large). Place on a jelly-roll pan and drizzle with oil. Sprinkle with garlic powder. Bake for 1 1/2 to 2 hours until golden. Remove from oven and place in quart jar. Sprinkle warm croutons with garlic salt and cheese. Seal and shake. Uncover. When cool, cover and store in refrigerator.
  • At serving time, toss greens with grapes and cheese and then dressing. Place on individual serving plates and sprinkle with croutons.
