Cheesy Grilled Portabello Mushroom Caps

  • First, remove the gills from the inside of the mushroom cap (I use a spoon and gently scrape them out) and wipe with a damp paper towel. Set aside. Preheat the grill, if you are using charcoal you can start sooner.
  • With a basting brush, brush the olive oil on the inside of the mushroom, sprinkle with salt and pepper, lay on grill. Cook on medium heat 3-5 minutes. Brush the outside with olive oil, salt and pepper. Cook additional 3 minutes.
  • In a bowl, mix all the herbs, garlic and cheese. Spoon the dry cheese mixture into the mushroom cap and close lid on grill, cook additional 2-3 minutes or until cheese is melted. Remove from grill and enjoy.

Special Equipment Needed


If this is your first time trying grilled portabello mushrooms I recommend putting all the different herbs listed if you can get them, they really come out good together. Be careful not to overflow the cheese mixture in the mushroom, it will melt and spill onto your grill.
