Once the basic cheese sauce is mastered, as it may take a few times to master, this is a super easy, fast and versatile dish that uses whatever combo of ingredients you have on hand. I rarely measure so I guessed the best I could.
A full flavored cheese is important to use or the sauce will be rather bland. Swiss works good, and extra sharp cheddar. Leftovers will thicken, so reheat in a pan adding more milk.
Experiment with seasonings too. Try adding chili powder, Italian, even some dry dressing mix such as good seasonings ranch. Make it your own!
