  • Brown beef and cook with taco seasoning according to directions. Make rice according to directions, add black beans.
  • Put beef on the bottom of oven safe dish, add olives and 1/2 package of cheese. Next add the rice mixture and top with the rest of the cheese.
  • Bake in the oven at 250 degrees F for 10 to 15 min. until the cheese has melted.


Serve as a dip with chips, or with taco shells... You can also eat it as a hot dish!

    I took this to a "Mexican Night" gathering at a home and was asked for the recipe. I took the leftovers to my sister-in-law's house two nights later to keep her from having to cook, and she wanted the recipe. That tells me it was good! And, I thought it was very yummy, too, as did my 4 year old!
