  • First, trim all fat from chicken and if it's thick, thinly slice it. Pour ranch dressing into a shallow dish. Mix together bread crumbs and taco seasoning packet into separate dish.
  • Dip the chicken breast into the ranch dressing, just enough to coat, transfer ranch chicken into bread crumb mixture and coat evenly. Repeat until all chicken breasts are coated. Evenly sprinkle 1/4 cup of the cheese onto each of the 4 chicken breasts, roll up the chicken into a "jelly roll" format. Put toothpick in place to hold chicken roll.
  • Heat oil in frying pan and when sizzling hot, place chicken, turning until bread crumb mixture is brown on the outside, and cheese is oozing out the sides. Serve warm.
