  • 1. Cut the bell peppers in half. Prepare the quinoa as directed. Prepare grill.
  • 2. Once quinoa is ready, combine with spinach, cilantro, red onion, garlic powder, and one cup of the mozzarella.
  • 3. Pour just a little olive oil on a piece of tin foil long enough to wrap the peppers like a present, and spread it around.
  • 4. Stuff peppers with quinoa mixture, and top with remaining mozzarella. Place stuffed peppers on the tin foil, wrap them up.
  • 5. Grill until cheese is melted (about 20-30 minutes).
