  • Boil potatoes with salt until tender. Drain and mash adding chives and sour cream; mix well.
  • Preheat oven to 325°F. Spray a casserole dish (about 8x11 size) with non-stick spray and add potato mix. Spread evenly. Then press down the center forming about a 1-inch crust along the edges.
  • Heat Velveeta cheese and milk on med/high heat until completely melted, stirring constantly. Pour melted cheese onto center of potato mix and sprinkle with bacon bits.
  • Bake about 25 minutes or until crust starts to brown. Let stand about 8 minutes and serve.


Be careful not to burn yourself when making the potato crust. A wooden spoon or spatula works great.
