  • Heat skillet and sear chicken with 1 Tbsp. butter until golden brown. Remove the chicken from the frying pan and set aside.
  • Add the remaining Tbsp. of butter, onion, curry powder, and flour. Sauté until onion begins to soften or brown. Add 2 cups chicken broth and chicken. Stir and let simmer 30 minutes.
  • Drain apricots and add to curry, add salt if desired. Let simmer 2-3 minutes and serve on a bed of rice or noodles. (Optional: add 2 Tbsp. cream to curry mix and stir before serving)


This recipe is great for company (you'll have to multiply the recipe)- it seems complicated but is actually easy to make (if you cook the rice in a separate pot while the curry is simmering the timing works out perfectly) and is something different from the traditional grilling or casseroles. I also usually add mushrooms.
