  • Pound chicken pieces and sprinkle with salt & pepper and thyme. Slice the zucchini and quarter the pieces. Melt butter in non-stick frying pan and place chicken in pan and brown on both sides. Add zucchini and sprinkle with a little salt and pepper and dried basil.
  • Place cut up peaches in pan with chicken and zucchini. Sprinkle with cinnamon and brown sugar. Cook over medium to high heat until chicken, zucchini and fruit are just done. Remove chicken from pan and place on a serving platter and surround with zucchini, and peaches.
  • Sprinkle a handful of flour into pan and stir making a roux. Add a splash of white wine, sour cream or plain yogurt, salt and pepper to taste. Stir until hot and pour over chicken, zucchini and fruit. Serve with your favorite rice recipe. Delicious!!

Special Equipment Needed


You may use canned peaches when fresh are not available - reserve the liquid and you can add the juice at the end with the flour etc. I also add more brown sugar for a sweeter taste if you like.
