  • Mix chicken, ginger, garlic powder, 1 Tbsp. cornstarch, and 1 1/2 Tbsp. soy sauce. Set aside. Chop broccoli, chestnuts, and onion. Slice carrots diagonally.
  • Stir fry chicken in 2 Tbsp. peanut oil until browned. Add vegetables and stir fry 2-3 minutes.
  • Mix water, remaining soy sauce and cornstarch and add to pan. Cover and cook 5-8 minutes. Add peanuts and serve over rice.
