  • PLACE chicken in a good size pot to boil. While chicken is boiling get a medium size pot and combine the sour cream, cream of chicken and diced chilies, stir well until all is combined. Place on stove to only heat up; not to a boil. Once chicken is done dice up in to small thin slice pieces. By that time the sauce should be heated.
  • PREHEAT oven to 400'. Get the tortillas and place on a plate. One by one smear a little of sauce in the middle of tortilla, then sprinkle some cheese and add the chicken. Then roll tightly and place in a pan that has been prayed with cooking oil. One after another keep repeating until tortillas are gone. Once pan is full get the rest of the sauce and spread all over top of enchiladas then sprinkle the rest of the cheese on top as well.
  • PLACE in oven for 15 minutes or until light golden brown. When done, place on stove to cool of for about 10 minutes or serve with your choice of sides.

Special Equipment Needed


When cooking the sauce make sure it does not go to a boil. Make sure the chicken is done before putting in enchiladas. Enjoy!!
