I buy 6 to 8 boneless skinless chicken breast, boil them till done, shred them into 2 cup amounts, and then freeze them till needed. It helps me prepare meals faster and are great for soups and casseroles. I also do the same thing with beef. I microwave the amount I need and then added it to whatever I am making.
I use milder Ro*Tel in mine as my children don't like it so spicy.
You can also substitute browned beef instead of chicken, just drain the beef really well.
